These stories were selected from those collected and edited by Joseph Jacobs. Reading these stories gave me a chance to regress to the accent I heard as a child in the Outer Mission District of San Francisco. Those parts of the stories written in dialect use yez for you and axe for ask and I don't recall hearing that in San Francisco.
Of the Celts, the Irish were the ones who truly savored stories. And they would take a tale from the middle east or Germany and make it Irish.
